If you are like me and it’s taken until mid-January to dig out from the holiday “cheer,” don’t worry. Here’s an easy way to make your January ministering fun. January 19th is National Popcorn Day. I’m including a favorite Kettle Corn recipe I got from a friend, Derek Haynie.

Killer Kettle Corn

3 tablespoons coconut oil (vegetable oil will work but the flavor of the coconut oil is part of the secret).

1/2 cup unpopped popcorn

1/3 cup sugar

1/2 teaspoon vanilla or almond powder (cooksvanilla.com)

Put all ingredients into a hand crank stovetop popper (Sweet n’ Easy Snack Machine is our favorite), set the stovetop heat between medium and medium high and start turning the crank.  In a couple of minutes it will start to pop. Popping will speed up considerably, all the while keep turning the handle, once it starts to slow to 2-3 pops per second turn off the heat, but keep turning.  While still holding crank handle dump into large bowl, you will need to return to flat and give it a few turns and dump again usually 2 more times to get it all out. Sprinkle with a little salt, stir and wait 90 seconds for it to crisp up.
