Sick Day Pineapple Mango Popsicles

This recipe is a variation of the iconic Dole Whip you may have tried if you’ve ever visited a Disney resort. It’s incredibly easy to make, so it’s a fun addition to your summertime treat arsenal.

This version uses mangoes along with (or instead of) the pineapple. A little bit of ice cream to make the finished whip more kid-friendly, but you can eliminate the ice cream for a lower-sugar version and just add 2 Tablespoons of the sweetener of your choice. You can also alter the “presentation” to suit your needs because it’s an incredibly simple, 4-ingredient cooking project even the youngest of chefs can enjoy.

We created this version when I was trying to find a way to soothe a sore throat for a 3-year-old who had just had tonsils removed. She felt good enough to play, but was not feeling her best. This easy recipe gave us both a distraction from her discomfort. We used it as part of the Sick Day with Amos McGee Playdate. But you can enjoy Mango Pineapple whip or Mango Pineapple Popsicles on any occasion.

Ingredients: 

  • 2 cups of frozen mango or pineapple chunks, or a combination of both.
  • ½ cup vanilla ice cream
  • ¼ teaspoon salt 
  • 2 ½ teaspoons lemon juice 

Make it Popsicles:

  1. Blend all ingredients together in a blender until the whip is smooth and creamy.
  2. For popsicles: Use your favorite popsicle mold and follow the manufacturer’s instructions. We found fun pineapple-shaped molds for ours.

Make it a Whip

  1. For something more like Dole Whip served as an ice cream dish, try spooning your whip into ice cream sundae glasses, or even swirling the whip into paper cups using a large star tip and a pastry bag.
  2. Let your grandkids “garnish” their own Mango Pineapple whip. Use fresh berries with a few mint leaves for a little extra color.
